YUM. This low carb, keto crunchwrap is ah-maze-ing! Made with fresh ingredients, including a homemade keto and low carb cheese sauce and served piping hot right out of the skillet, it is truly tastier than the fast food version.

A few things you should know:

-This recipe takes a while to make. There’s a homemade cheese sauce, taco meat, frying, layering, and frying some more. Guess what, though. It’s totally worth it!

-Each Crunchwrap uses one La Bandarita Carb Counter Soft Taco sized tortillas and two La Bandarita Carb Counter Street Taco sized tortillas. Plan ahead and make sure you can find these before you get started. My local grocery store is always running out, so I make sure to stock up when I can find them.

-Your net carbs may vary greatly from mine depending on your ingredients. Please make sure to calculate your own nutritional information using your specific ingredients to get the most accurate measurements.

Ingredients

For the Cheese Sauce

  • 4 tbsp unsalted butter
  • 8 oz cream cheese softened
  • 1/2 c chicken broth
  • 8 oz cheddar cheese shredded
  • 1/2 tsp onion powder

For the Taco Meat

  • 2 tbsp avocado oil
  • 1 lb ground beef
  • 2 tsp paprika
  • 2 tsp cumin
  • 2 tsp chili powder
  • 1 tsp garlic powder
  • 1/4 tsp sea salt

For the Crunchwrap Supremes

  • 1/4 c avocado oil
  • 6 La Banderita Carb Counter Street Taco tortillas
  • 12 La Banderita Carb Counter Soft Taco tortillas
  • 6 tbsp sour cream
  • 1/2 c green leaf lettuce shredded
  • 3 medium Roma tomatoes seeded and chopped
  • 1/2 c shredded cheddar cheese

Instructions

For the Cheese Sauce

  • In a medium saucepot, melt butter and cream cheese over low heat. Turn heat up to medium-low, and whisk in chicken broth until smooth. Add shredded cheese and onion powder, and whisk until smooth.

For the Taco Meat

  • Heat avocado oil in a large skillet over medium-high heat. Brown the ground beef (about 10 minutes). Drain off all but 2 tbsp. of the fat. Add the paprika, cumin, chili powder, garlic powder, and sea salt. Stir one minute until fragrant. Set meat aside and clean and dry the skillet.

For the Crunchwrap Supremes

  • Heat enough avocado oil to cover the bottom of a large skillet over medium-high heat. Fry both sides of six of the Street Taco tortillas until browned.
  • Layer a Soft Taco tortilla with 1/6 of the ground beef mixture, 1/6 of the cheese sauce, one fried Street Taco tortilla, 1 tbsp. sour cream, 1/6 of the lettuce, 1/6 of the tomatoes, 1/6 of the shredded cheese, and one soft (not fried) Street Taco tortilla. Fold the edges of the Soft Taco tortilla in, and fry each side until golden brown, starting with the folded side down. Repeat for the remaining five crunchwraps. (See the video for help.)
