Do you just love easy, flavorful, one pot, summer slow cooker meals?? Me too! Did I mention healthy? This one’s healthy, too. Sounds too good to be true, right? I’m so tired of spending lots of time and money to eat well. Especially after I’ve slaved away at a brutal 9 to 5.
This is basically how my day goes: I wake up at 5am after the baby has been up all night and I can’t go back to sleep because I’m thinking about all the things that need to be done. I get up and sometimes make some form of a Paleo and Whole30 Cinnamon Vanilla Latte. I clean the kitchen a bit and go ahead and get dressed for work.
By that time, the kids are up and suddenly can’t function without my help. I get them dressed and out the door and then I take a couple minutes to slap on some makeup and brush my hair only to arrive at work ten minutes late.
I get a short lunch break, so I usually come home and run a load of dishes while I whip up a simple salad. After work, I pick up the Littles from daycare and when I get home, I feel like it’s nearly bedtime again.
It’s super-nice to have something like this Paleo and Whole Pulled Barbecue Chicken in the slow cooker so I just don’t have to worry about cooking dinner in the evenings. I just get up a few minutes earlier in the morning, dump everything in the Crock Pot and go!
If I don’t have time to throw everything in the slow cooker before work, I just use my Instant Pot when I get home. It’s just as easy with minimal cleanup.
The more I eat Whole30, the more apt I am to just drink my coffee black. And I’m okay with that because 1) it’s healthier, 2) it’s easy and 3) it’s cheap. If a year ago I’d told myself I’d be drinking black coffee at this point in my life, I’d have slapped my barely 30-year old something self in the face and said you’re crazy. But here I am. Anyway…
This Paleo and Whole30 Pulled Barbecue Chicken is legit. It’s full of flavor, super-simple to make, easy on the budget and Paleo and Whole30-friendly. Grain-free, gluten-fee, dairy-free and all that jazz too. You can make it in the slow cooker or an Instant Pot and it’ll still come out delish.
Paleo and Whole30 Slow Cooker Pulled Barbecue Chicken - BBQ Chicken
Ingredients
- 2.5 lb. boneless skinless chicken
- 14.5 oz. tomato sauce
- 1/2 c. balsamic vinegar
- 1 c. unsweetened apple juice add 1/2 c. for the slow cooker
- 3 tbsp. coconut aminos
- 1 tbsp. chipotle powder
- 1 tbsp. chili powder
- 1 tbsp. smoked paprika
- 1 tbsp. garlic powder
- 1 tbsp. onion powder
- 1 tsp. allspice
- 1 tsp. cinnamon
- 1 tsp. sea salt
- 10 oz. Sweet and Spicy Ketchup
Instructions
- Add everything but chicken to the Instant Pot or slow cooker and mix well.
- Add the chicken.
- In the Instant Pot, choose the "poultry" option, wait until finished and use the slow release option. In the slow cooker, cook on low 6-8 hours.
- Uncover, remove the chicken, shred with two forks and replace, stirring well. Ensure the chicken has reached at least 165°F at its thickest point before shredding. I use this Weber instant digital thermometer.
I have had this Paleo and Whole30 Pulled Barbecue Chicken so many ways. Alone in a bowl, over a bed of fresh green leaf lettuce or kale, over plantain rice or spooned into some grain-free wraps. Whatever you do, just eat it!
