Notes
Reserve 1/4 of the salsa to serve over top of the meatloaf. Alternatively, purchase two containers and use a full 12 oz in the meatloaf mixture and as much as you like over top. Nutrition facts include one 12 oz. container of salsa. If you are salt-sensitive, cut the salt in half. You can sub sea salt or iodized salt for the kosher salt. If you do, cut it to 1 teaspoon. For a spicier dish, add some finely diced jalapeños into your initial meatloaf mixture. This recipe makes 12 servings. Three pounds is a lot of meat. Our family of six loves leftovers. Feel free to adjust the recipe to your individual needs.Nutrition facts do not factor in the ground beef fat lost during cooking on the roasting pan rack.We do not recommend cooking this meatloaf without the rack. The rendered fat in the pan will cause the meatloaf to become soggy and fall apart. If you want to add back more fat, feel free to spoon some over your meatloaf after cooking. Nutritional information for my recipes is provided as a courtesy and are only an approximation.
