My oldest daughter loves spinach and artichoke dip. I love that it’s low carb and keto-friendly. I serve it with red bell pepper scoops, celery sticks and cucumber slices.
To make it into a meal, I just add shredded rotisserie chicken, spread it into a casserole dish and bake it until browned and bubbling!
Keto Chicken Spinach and Artichoke Casserole
Equipment
- two-quart casserole dish
Ingredients
- avocado oil cooking spray
- 2 c shredded cooked rotisserie chicken
- 10 oz package frozen chopped spinach thawed and drained
- 12 oz quartered and marinated artichoke hearts drained and roughly chopped
- 8 oz cream cheese softened
- 1 c mayonnaise
- 1 c sour cream
- 1 c grated parmesan cheese
- 2 c shredded monterrey jack cheese separated
- 3 eggs
- 3 tsp garlic powder
- 1 tsp onion powder
- 1/2 tsp freshly cracked black pepper
- Optional: finely chopped fresh pasley for garnish
Instructions
- Preheat oven to 375°F. Grease a two-quart casserole dish.
- Mix all ingredients except half (1 cup) of the Monterey jack cheese, and spread into the casserole dish.
- Sprinkle with the remaining 1 cup of Monterey jack cheese.
- Bake at 375°F for 30 minutes or just until browned and bubbly.
- Garnish with finely chopped fresh parsley if desired.
