Loaded Whole30 & Paleo Tuna Salad

I whipped up this Loaded Whole30 & Paleo Tuna Salad on my lunch break.  It’s super-easy to make and chock-full of flavor and healthy goodness.  Since I work only five minutes from home and my husband works at home, we usually eat lunch together.  In other words, I’m responsible for making, planning, and/or coordinating our lunches every day in addition to dinners and sometimes even breakfasts, eek!  Now, he won’t touch canned tuna with a 10-foot pole, but I love it because it’s healthy, cheap, and easy.  Today he had a business lunch, so I was on my own mid-day. I felt like Mel Gibson in Braveheart… “FREEDOM!” Do you need a visual?  Here you go…

Let’s get down to business though. Please don’t make the same mistake I did with your tuna.  Check those labels!  If you’re following my Whole30 journey (Thirty Days of Whole Thirty Recipes ), you know that I ate some tuna that wasn’t Whole30 compliant.  Many of the brands out there contain soy!  After a little research, I found that Trader Joe’s Tuna is Whole30 and Paleo compliant.  The ingredients list consists of tuna, water and salt.  Period.  Go buy some or order it on Amazon before you make this Loaded Whole30 & Paleo Tuna Salad recipe.

Whole30 Loaded Tuna Salad

Ingredients

  • 5 oz. soy-free canned tuna
  • 3 tbsp. Tessemae’s Mayonnaise
  • 1/4 c. shredded carrots
  • 2/3 red seedless grapes halved
  • 2 tbsp. slivered almonds
  • salt and pepper to taste
  • 2 scallions green part only, chopped, optional

Instructions

  • Combine soy-free tuna and Tessemae’s Whole30-Approved Mayonnaise in a medium-sized mixing bowl.
  • Fold in the carrots, grapes and almonds, being careful not to smash the grapes while still mixing thoroughly.
  • Add salt and pepper, to taste.
  • Garnish with scallions if desired.

This will probably be one of my Whole30 go-to lunches when the husband isn’t around, and its possibilities are endless.  Are you following the Whole30 lifestyle change, too?  I want to know about your struggles and successes, tips and tricks!  Did you try my recipe?
