Instructions
Preheat oven to 350°F.
Cream together the butter and sugar until light and fluffy with the whisk attachment of your stand mixer.
Add the egg yolk and vanilla extract. Mix well.
In a separate bowl, whisk together the flour and salt.
On your mixer, switch out the whisk attachment with the paddle attachment. Add the flour mixture to the butter and sugar mixture and combine.
Line two cookie sheets with parchment paper.
Roll the dough into 1-inch balls, and place the cookie dough balls on the baking sheets two inches apart.
Bake for 5 minutes.
Remove from the oven and make heart indentations by pressing two thumbprints into V-shapes. (If your thumbs are too big, use a different finger.)
Warm the jam until you can stir it into a smooth (but still thick) consistency. Using a small teaspoon or large dropper, add 1/8 - 1/4 tsp of jelly to fill each heart.
Bake for about 12 - 15 minutes more until the edges of the cookies are slightly golden.
Cool cookies on a wire rack.
Notes
Use room temperature ingredients for the cookie dough to ensure proper mixing and a smooth texture.
Chill the dough before shaping to make it easier to handle and prevent spreading during baking.
Experiment with different types of jam or preserves for a fun twist on the classic recipe—think strawberry, apricot, or even chocolate sauce!
