This Low Carb, Keto Broccoli Salad has all the things you love about broccoli casserole. Mayonnaise (Do I have any mayonnaise addicts like myself out there?) BACON. (Because who doesn’t love bacon?) Cheese! (This just keeps getting better.) Oh yeah, and the broccoli. I do love broccoli. Ingredients
  

  • 1/2 c. mayonnaise
  • 1 tsp. red wine vinegar
  • 2 tsp. granulated erythritol
  • 1/2 tsp. freshly cracked black pepper
  • 12 oz. fresh broccoli florets roughly chopped
  • 6 slices bacon cooked, cooled and chopped
  • 1 c. finely shredded mild cheddar cheese

Instructions
 

  • Whisk first four ingredients in a mixing bowl until well mixed.
  • Add remaining ingredients and mix well.
  • Add sea salt and additional freshly cracked black pepper to taste.
  • Cover and chill four hours or overnight.
