Can you feel that? It’s spring. Just around the corner. I am so stoked for warmer temps and longer days. We had a couple February weeks of 60-70 degree temperatures and they were amazing. We’re back down to reality now in the fifties, but I can deal with that just knowing spring is on its way. As much as I love to cook during the winter, warmer weather is for playing outside!

I did parboil the potatoes to speed things up, so technically this is a two-dish wonder. I’m totally okay with that though. Hubby is super picky about his steaks, and he said this recipe is a winner. It stood up against our grilled, sous vide steaks and held its own. It’s just as tender and tasty but loads quicker to make. Cha-ching! Adding it to our weekly rotation because it’s so dang easy and healthy with minimal effort.

  • Add the potatoes to a pot and fill with water until the potatoes are covered. Bring the water to a boil, and boil 10-15 minutes until potatoes can be pierced with a fork but aren’t mushy.
  • White the potatoes are boiling, mix the avocado oil, balsamic vinegar, minced garlic, dried rosemary, sea salt and freshly cracked black pepper.
  • Grease a baking sheet with avocado oil, brush each side of the steaks with the sauce and place the them on the sheet.
  • Once the potatoes are parboiled, toss the potatoes and mushrooms in the sauce using tongs and place them on the sheet.
  • Give everything a light sprinkling of sea salt and freshly ground black pepper.
  • Broil everything on high for 3-4 minutes.
  • Remove the pan from the oven. Turn the steaks, brush with marinade and broil another 3-4 minutes depending on your preferences. Test with a digital thermometer for doneness.

Notes

Be extremely careful taking the sheet out of the oven. Juices will be splattering, and the broiler is extremely hot. I pulled my thinner steak out at 3 minutes on the second side and put the thicker steak back in for one more minute.
