Have you jumped on board the Chaffle train yet? I finally did, and I’m smitten! I’ve always avoided Keto bread substitutes because they tend to be really eggy, gooey and/or spongy (from my experience).
I changed my mind after creating this firm, crispy, not-too-cheesy or eggy BEST CHAFFLE EVER.
Since then, I’ve been experimenting with all kinds of Chaffles. This Keto Reuben Chaffle has tied with my Keto Big Mac Chaffle for my favorite. The super thin, juicy, perfectly seasoned hamburger patty, sautéed onions, crunchy dill pickles, shredded iceberg lettuce, American cheese and Thousand Island dressing really make my Keto Big Mac Chaffle ahhhhhh-maze-ing.
But MAN, this Keto Reuben Chaffle is right up there with it! With shaved corn beef, juicy sauerkraut, melty Swiss cheese and Thousand Island dressing, this grilled, buttery Keto Reuben Chaffle tastes better than the real thing without all the harmful additives and questionable ingredients.

The nutrition facts are based on HALF of a Keto Reuben Chaffle being a full serving. These Chaffles are filling alone, and it is impossible for me to finish more than a half of one of these Reubens in one sitting. Split one with your low carb friend or save half for later!

Keto Reuben Chaffle - Low Carb Reuben Sandwich
Equipment
Ingredients
- 2 of the BEST Chaffles Ever
- 2 tsp. butter
- 1 slice 1 oz. Swiss cheese
- 1/4 lb. 4 oz. shaved corned beef
- 3 tbsp. sauerkraut
- 2 tbsp. Thousand Island dressing
Instructions
- Preheat a skillet on medium heat.
- Butter one side of each Chaffle.
- Spread non-buttered sides evenly with Thousand Island dressing.
- On one Chaffle, layer Swiss cheese, corned beef and sauerkraut.
- Top with remaining Chaffle, buttered side out.
- Grill Chaffle until both sides are golden brown, about 5 minutes per side.
- Cut into halves and serve.

I don’t know if you knew it, but this photo is in the book Keto Chaffle Recipes Cookbook (https://smile.amazon.com/gp/product/B08LH83XX7) with their rueben chaffle recipe (which looks a little different from theirs). I looked inside the book online to see if it would be worth the cost. Many of the recipes seemed to be copied from the internet (although strangely reworded to seem like they were written by a bot at times) so I searched for matching ones and yours came up here. I don’t know if you gave permission for it to be used but I thought I’d give you a heads up. Your watermark was cropped off the bottom of the photo.
