21 Jun Paleo Strawberry Coconut Popsicles, Whole30 Ingredients
These Paleo Strawberry Coconut Popsicles are the perfect summer treat. Made with Whole30-compliant ingredients like strawberries, coconut milk, pineapple juice and OJ, they are healthy yet incredibly tasty. Dairy free, vegan and vegetarian-friendly.

Happy first day of summer! It’s my most favorite time of the year. Give me 95-degree days in the sun over endless snow, cool autumn breezes and springtime showers any day. As long as I have water to keep me cool. And popsicles. These Paleo Strawberry Coconut Popsicles made with Whole30 compliant ingredients to be specific.
These Paleo Strawberry Coconut Popsicles are basically mini frozen smoothies. They’re made with coconut milk, pineapple juice, OJ and frozen strawberries. In fact, you can just make a smoothie if you just want one serving or don’t want to fill the popsicle baggies. My kids like the baggies. I like that the servings are small and that I can make a batch big enough for 3-4 rounds per kid (15 total).
I use this Ninja blender, these 2×5 popsicle baggies and this collapsible silicone funnel to fill them. Here is a Prime-eligible set of the small baggies that comes with a funnel.

As a reminder, although the ingredients for these Paleo Strawberry Coconut Popsicles are Whole30-compliant, the end result isn’t really acceptable during a Whole30. You don’t really want to consume anything that resembles a dessert, and smoothies are frowned upon as well because you aren’t eating the food in its original form and it’s easier to overeat.

Paleo Strawberry Coconut Popsicles, Whole30 Ingredients
Ingredients
- 14.5 oz can full fat coconut milk
- 4 c. fresh or frozen strawberries chopped
- 1 c. 100% pineapple juice
- 1/2 c. 100% orange juice
Instructions
- Blend all ingredients in a high-powdered blender.
- Using a funnel, fill popsicle baggies with smoothie mixture.
- Freeze at least two hours before serving.
