I don’t know about your family, but our weeknights are pretty crazy. There just aren’t enough evening hours to do homework, clean up a little and make a healthy dinner before beginning bedtime routines so we can start all over again.
Don’t you just love it when you can dump a few easy ingredients in the slow cooker and come home to a piping hot, delicious (and also healthy) dinner? If so, then this Paleo and Whole30 Pineapple Salsa Chicken is for you!
I made a double batch so we’d have leftovers for the rest of the week. We served it over plantain rice, over lettuce in the form of taco bowls and just plain.

Paleo and Whole30 Pineapple Salsa Chicken - 4-Ingredients!
Ingredients
- 16 oz. Whole30-compliant salsa
- 20 oz. crushed pineapple in 100% pineapple juice
- 2 tsp. chili powder
- 1 tsp. salt
- 1/2 tsp. freshly ground black pepper
- 2 lbs. boneless skinless chicken breasts
Instructions
- Add all ingredients except chicken to the slow cooker and mix well.
- Add the chicken and cook on high for 4-5 hours or low for 6-7 hours.
- Remove the chicken and shred with forks.
- Add the chicken back to the slow cooker and mix well.
- Serve over plantain rice or lettuce, or just enjoy it alone!
