Can you believe it’s finally spring? (If you’re in the Northern Hemisphere, that is.) I’ve been feeling like this day would never come. Even though our East Tennessee winter was highly uneventful and pretty mild, I’ve still been holed up indoors in my sweatpants and fuzzy socks dreaming about this day.

Anyway, I’m celebrating this beautiful spring (yes, SPRING!) day with a luscious Raspberry Lemonade Smoothie. Who doesn’t love lemonade on a warm, sunny day?!

This Raspberry Lemonade Smoothie combines all the flavors of your favorite summertime treat but without all that added sugar. Don’t get me wrong. This isn’t exactly a low-sugar treat. The sweetness just comes naturally from fruit.

For this smoothie, I used my electric citrus juicer my sweet hubby bought me for Valentine’s Day. Yes, I’m kind of strange and get more excited over kitchen gadgets than I do flowers and chocolates.

If you don’t have an electric citrus juicer, this hand juicer works just fine for small jobs like this one. I use my hand juicer almost daily for squeezing a lemon into my sparkling water, an orange into the steak marinade or a lime over my taco salad bowl or pineapple salsa chicken concoction. Can you tell I have a thing for citrus fruits?

Ingredients

  • 2 c. frozen raspberries
  • 1 banana
  • juice of 2 lemons I used my electric citrus juicer, but a hand juicer works well for this job too.
  • 1 c. water
  • 1 c. ice
  • extra lemon slices or raspberries for garnish optional

Instructions

  • Add all ingredients to a high powered blender and process until smooth. I just bought a Ninja Pro Blender, and I love, love, LOVE it! It can blend anything in ten seconds flat.
