Happy December! Are you in the holiday spirit yet? We have a Christmas tree up and a lone set of lights on the front of the house. As busy as things are right now, that’s probably as good as it’s going to get this year.
And I’m okay with that. When I need a little extra Christmas cheer, I’ll just cozy up to this Paleo and Whole30 Peppermint Mocha Latte in my fuzzy socks in front of the fire.
It’s so minty….and creamy…
and chocolatey.
The good part? It only requires four ingredients.
The great part? It’s so easy to make! Just pop everything in a Ninja or other high-powered blender for 15 seconds, and you’re done.
The best part? It’s healthy! Now, this Paleo and Whole30 Peppermint Mocha Latte isn’t sweet. If you’re familiar with the Whole30, you shouldn’t miss having a sweetener much. If you’re Paleo, add a little honey or maple syrup, and you’ll be good to go.
Top it with a little whipped coconut cream and unsweetened cacao nibs if you’re feeling fancy.
Paleo and Whole30 Peppermint Mocha Latte
Ingredients
- 8 oz. freshly brewed coffee
- 8 oz. full-fat canned coconut milk
- 3 peppermint tea bags
- 2 tbsp. cacao powder
- Whipped coconut cream and unsweetened cacao nibs for garnish (optional)
Instructions
- Begin steeping the peppermint tea bags in freshly brewed coffee. Steep 4 minutes.
- Heat coconut milk over medium heat in a saucepan until hot but not boiling, stirring continuously with a wooden spoon.
- Split into two coffee mugs, and top with whipped coconut cream and unsweetened cacao nibs if desired.
I’ve gotten a lot of questions about what foods are Whole30-compliant and why some aren’t. I’m so happy to help, but I would definitely recommend reading the Whole30 books if you haven’t already. Knowledge really is power, especially when you’re just trying to make it through the work day and that 3pm chocolate bar craving hits. You’ll know why you’re feeling the way you are and what you can do to squash it.
