Are any of you gals early birds like me? I can barely sleep past 5:30 anymore. And I’m totally fine with that. From 5 to 7 is when I’m the most productive. I get up, get a shower, run a load of dishes and then sit down with my laptop and a latte all before the kids are even awake.
It really helps me to get in some quiet time before I have to get the kids dressed and run off to a high-stress job. I usually sit in the dark with only a lamp on and listen as the birds begin chirping outside. I manage several people at work and come home to four crazy, lovable kids, so I really appreciate my morning latte time.
So far, my favorite latte concoctions are my Paleo and Whole30 Mocha Latte and my Paleo and Whole30 Cinnamon Vanilla Latte, but this Paleo and Whole30 Chai Spice Latte is right up there with those. All the flavors of chai tea combined with freshly brewed coffee and a touch of creamy coconut milk will start your day off right. Sprinkle with cinnamon for an extra little kick and a drool-worthy pic.
Paleo and Whole30 Chai Spice Latte
Ingredients
- 16 oz. medium roast coffee freshly brewed
- 2 chai tea bags
- 1/2 c. canned full-fat coconut milk
- 1 tbsp. Grade A organic maple syrup omit for Whole30
Instructions
- Steep tea bags in hot coffee for 3-5 minutes.
- Heat the coconut milk in a saucepan over medium heat until hot but not boiling.
- Discard tea bags. Add everything to a high-powered blender like a NutriBullet or Ninja. (Please note these devices' instruction manuals do not recommend blending hot liquids. I have never had a problem with either one. Use your good judgment, though, and buy an inexpensive milk frother if you'd prefer.)
- Pulse for 10 seconds and serve immediately.

I’ve gotten a lot of questions about what foods are Whole30-compliant and why some aren’t. I’m so happy to help, but I would definitely recommend reading the Whole30 books if you haven’t already. Knowledge really is power, especially when you’re just trying to make it through the work day and that 3pm chocolate bar craving hits. You’ll know why you’re feeling the way you are and what you can do to squash it.
If you’re like me, a busy working mom with too much to do to sit down and stop everything to read a book, you should definitely check out Amazon’s Audible program. That’s how I found time to read It Starts With Food, by having it read to me. I love, love Audible. I just recently purchased Food Freedom Forever with one of my monthly credits, and it’s another winner so far. I listen to it in the car to and from work and also while I’m cooking and doing chores.

Posted at 13:13h, 20 JanuaryThanks for the recipe. Unfortunately, I don’t think that it is whole30 compliant with maple syrup. Also, for both safety and practical reasons, I would not keep using your nutri bullet for hot beverages. My husband and I used to do that too with bulletproof coffee; until the last time when it cracked and hot liquid shot all over the place. No more nutri bullet. We now use an immersion blender and it works great and is easier to clean 🙂.

Posted at 16:53h, 24 JulyThere is a note stating maple syrup is for those not on the Whole30 (it’s for readers eating Paleo, etc. I don’t care for sweets and don’t use it myself.) I also include a disclaimer in my posts saying most blenders instruct the user to not blend hot liquids. I have never had a problem, but I love my immersion blender as well and it’s much less messy. Thanks for your comment!
