Thirty Days of Whole30 Meals – Day 3

Join my family and me as we start out 2017 Whole30-style! These are our Thirty Days of Whole30 meals.

Day 3 of our Thirty Days of Whole30 Meals is complete, and it was a little tougher than the first two days. I woke up a little puffy again, but not as much as on Day 2. I had a headache for most of the day, but I still didn’t really have any cravings.

Breakfast

In an effort to incorporate more leafy greens into my Whole30 meals, I had creamed spinach, a blood orange, some extra crispy (by accident) bacon and a Grapefruit La Croix for breakfast. If you’re not familiar with La Croix, it’s a brand of sparkling water with no artificial or natural sweeteners of any kind. For the spinach, I sautéed some onions until softened and then added the spinach, some coconut milk and a little salt and pepper. It was surprisingly delicious.

Lunch

For lunch, we had leftover Chicken Fajita Bowls (recipe coming soon!). I cut up some boneless, skinless chicken breasts into one-inch pieces and browned them in some salt, pepper and fajita spices along with lots of colorful bell peppers and onions. I topped off the bowls with a squeeze of lime.

Dinner

After work, I came down with a fever and was not able to make dinner. I don’t attribute it to the Whole30 though. My poor husband had to fend for himself. Later that night, I was finally able to eat a handful of cashews and a couple dates with a small glass of 100% pomegranate juice (not pictured).

 Day 3 of our Thirty Days of Whole30 Meals was a little rough with my day-long headache and evening fever, but I still didn’t have any cravings or strong temptations.
