This Paleo and Whole30 Chicken Bacon Ranch Sheet Pan Dinner combines tender, juicy chicken thighs with roasted broccoli and crispy bacon smothered in typical ranch dressing herbs and seasonings like chives, dill, parsley and onion and garlic powder into a one-dish, quick and tasty sheet pan dinner. I’m in love with the sheet pan dinner craze. I love all things thrown on a sheet pan and stuck in an oven for dinner because 1) it’s quick 2) it’s easy 3) there’s hardly any cleanup.

This Paleo and Whole30 Chicken Bacon Ranch Sheet Pan Dinner combines tender, juicy chicken thighs with roasted broccoli, crispy bacon and typical ranch dressing herbs and seasonings like chives, dill, parsley and onion and garlic powder into a one-dish, quick and tasty sheet pan dinner. (Okay, two dishes. You do need a small mixing bowl for the ranch spice mix, but it’s totally worth it.)
Drizzle it with Tessemae’s Whole30 Ranch Dressing to serve, and you can’t go wrong!
Paleo and Whole30 Chicken Bacon Ranch Sheet Pan Dinner
Ingredients
- 2 tbsp. avocado oil separated, plus extra for greasing pan
- 1 tsp. dried chives
- 1 tsp. dried dill weed
- 1 1/2 tsp. onion powder
- 1 1/2 tsp. garlic powder
- 1 1/2 tsp. dried parsley
- 1 lb. boneless skinless chicken thighs (about 4 thighs)
- 3 c. broccoli florets
- 8 slices bacon cooked but not yet crispy
- Tessemae's Ranch Dressing for drizzling optional
Instructions
- Preheat oven to 400°F.
- Grease sheet pan with avocado oil.
- Mix together dry spices in a small mixing bowl.
- Rub chicken thighs with 1 tablespoon avocado oil and pat both sides with 2/3 of the spice mix.
- Place the chicken thighs on sheet pan.
- Toss the broccoli with the remaining one tablespoon avocado oil and sprinkle with remaining spice mix, covering the broccoli evenly.
- Place in a single layer on the sheet pan.
- Bake ten minutes.
- Sprinkle with chopped bacon.
- Bake at 400°F for an additional 10 minutes or until chicken reaches 170°F and broccoli is softened. (I keep this Weber instant read digital thermometer on my countertop at all times.)
- Drizzle with Tessemae's Ranch Dressing if desired.
When I make a meal like this with plenty off leftovers, I like to go ahead and pre-portion it into these cute two-compartment meal-prep containers. Just hold the ranch dressing until after you reheat it.
